Hot Cross Bun Brownies Serves 10
Ingredients:
Instructions:
100g Butter, Melted
40g Cocoa Powder
2 Medium Eggs
200g Caster Sugar
100g Dark Chocolate, Broken Into Chunks
50g Self Raising Flour
2 Hot Cross Buns, Toasted
60g Mini Eggs
1. Preheat oven to 180ºc / 160ºc fan. Line a
square 20cm tin with baking paper.
2. Mix the melted butter and cocoa powder
until smooth.
3. In a seperate bowl whisk the eggs and
sugar until thick and creamy. Whisk into the
chocolate mixture.
4. Using a metal spoon fold in the chocolate
chunks and flour.
5. Tear the hot cross buns into rough 20cm
chunks and scatter them evenly in the tin,
keeping some for the top.
6. Spoon the brownie mixture over the buns.
Place the remaining hot cross bun chunks
on top.
7. Bake for 30 mins, until just set but a
bit wobbly in the centre. Scatter broken mini
eggs on top.
